If you’ve been living a Paleo lifestyle for any amount of time, you know about the 80/20 rule: follow the parameters of Paleo living 80% of the time, and you can “cheat” 20% of the time. Now, when I say “cheat”, I don’t mean CHEAT (like with an entire pizza or a bowl of Fun Sized Heath bars… I would never do that… Never.)
However, there are times when we want to indulge in some processed sugary thing without completely derailing our grain free/dairy free lifestyle. I for one must eat a Casein Free diet at all times or bad things happen, same with most grains so many cookies are out. Peanut Butter Cookies make my toes tingle. In a good way. I love them.
Ergo – the Peanut Butter cookie.
This super simple recipe started with a guide from my friends at mycrazygoodlife.com. I didn’t have enough peanut butter on hand at the moment, so I tweaked the recipe a few times to suit what I DO Have on hand.
These…. Smell…. So… Good….:
- 1 Egg
- 1/2 cup Peanut Butter
- 1/4 cup Almond Butter
- 1/4 Cup Coconut Flour (grind Coconut flakes till fine like a flour
- 1 cup Organic cane sugar
- 1tsp vanilla
Preheat oven to 350 and set out ingredients so they can raise to room temperature.
Mix peanut butter, almond butter and coconut flour together in a medium sized bowl.
Whisk in egg with fork, then add vanilla
Scoop out 1 inch balls of dough and roll the dough between your hands till it forms a nice ball about an inch in diameter.
If you want to get fancy, take a fork and dip it in some sugar to do the criss cross. Makes it fun.
Bake in the oven for 12 minutes or until lightly browned.
Let cool and try not to eat the whole thing in one day.
