Skinnified Recipes anyone?

It has occurred to me, since moving to the Low country, that healthy cooking is not the norm. I’m sure the 76% obesity rate could have tipped me off, but no. It didn’t. Neither did the moldy produce at most grocery stores. Is nobody buying fruit??! Guess not.

So. I had a nice convo with some of the local moms in the area, and come to find out, they WANT to know how to cook healthy. So I’m thinking of posting some recipes on this blog for y’all (that’s right, I said “y’all”).

Here are the first recipes I’m going to give you:

Skinny Banana Muffins

Skinny Overnight Oatmeal

Easy low-cal taco night

Skinny Tuna Noodle Casserole

Skinny Morning Mochas

Super Juice (Kid’s favorite)

Beet Green Power Muffins

Hide-a-veggie cookies

Low-cal “spaghetti”

Thin-chiladas

Here’s a clue (there are substitutions for almost every fat/oil if you want them, and you can still have FLAVOR)
